Pumpkin Pancakes
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 Tbsp vegetable oil
2 Tbsp vinegar
Mix the above ingredients together and set aside.
Combine the following ingredients in a separate bowl:
2 cups flour
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp allspice
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp salt
Add the dry ingredients to the pumpkin mixture and stir just enough to combine. Cook on a hot griddle, and enjoy with butter and real maple syrup (none of that fake junk!).
